Stuffed Shells

You may think that Italian food is off your menu if you are dieting, but that is not the case.  You can eat Italian food that is delicious but healthy.  The Weight Watcher Stuffed Shells are simple and delicious.  Definitely a menu staple.

For the recipe you will need:

1 Cup Part-Skim Ricotta Cheese
1 Cup fat-free cottage cheese
1 TSP Table Salt
1 TSP Garlic Powder
1 TBSP Dried Oregano
¼ TSP Black Pepper
3 Cups Canned Tomato Sauce (I use Classico Tomato & Basil)
1 Pound Cooked Pasta, Jumbo Shells (24 shells)

The first time I cooked this dish, I used the ricotta cheese.  The second time I forgot to pick up ricotta so I substituted it for another cup of fat-free cottage cheese.

Preheat over to 375.

Mix together cheeses, salt, garlic powder, oregano and pepper.  If you are using 2 cups of cottage cheese, I recommend using a food processor to blend cottage cheese until smooth.

Spread a few spoonfuls of tomato sauce on the bottom of a 9X13-inch baking dish.

When cooked shells are cool enough to handle, fill each shell with cheese mixture and place in baking dish.

When all shells are in dish, spoon remaining tomato sauce over shells

Cover pan and bake for 20 minutes.  The dish yields 4 shells per serving and is 5 points.  This dish is simple and you would never know it was healthy.
