Rocky Road Brownies


Who doesn’t love Rocky Road ice cream?  Well what about Rocky Road Brownies?  What about Rocky Road Brownies that are healthy?!  When I was searching for a dessert for Easter dinner I stumbled upon the Weight Watcher Rocky Road Brownies I couldn’t help but try them out.  The best part these brownies are super easy to make and only 4 points per slice.


For the Rocky Road Brownies you will need:

1 package regular brownie dry mix (I used a low-fat mix to make them even healthier)
¼ cup water
¼ cup unsweetened applesauce
4 large egg whites
¼ cup walnuts, coarsely chopped
¼ cup mini chocolate chips
8 medium marshmallows chopped or 1 cup mini marshmallows




Coat a 9X13 inch pan with cooking spray and set aside.


Prepare brownie mixture according to package direction but use ¼ cup water, applesauce and egg whites.


Bake according to package directions.  Remove from oven about 5 minutes before the end of the baking time and add chocolate chips and marshmallows over the top. 



Cook 5 more minutes and remove from oven.

Cut into 24 pieces each piece is 4 points.
