Skinny Chunky Monkey Cookies Recipe


I love to bake so I am always looking for healthy desserts.  When I found the Skinny Chunky Monkey Cookie Recipe, I knew I had to try it.  Based on the recipe, I knew it would be similar to no bake cookies only healthy.

For the recipe you will need:


3 ripe bananas
2 cups old-fashioned oats
1/4 cup creamy peanut butter
1/4 cup unsweetened cocoa powder
1/3 cup unsweetened applesauce
1 tsp. vanilla extract

Preheat oven to 350°F.


Mash bananas in a large bowl. 


Then stir in remaining ingredients.


Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto cookie sheet (should make 30 cookies).

Bake 10-12 minutes.

One cookie is equal to 1 point.

These cookies are good but I wish there was a little more peanut butter taste.  I will make them again but not all the time.  I liked the Chocolate-Fudge Cookie Bites better.

Rocky Road Brownies


Who doesn’t love Rocky Road ice cream?  Well what about Rocky Road Brownies?  What about Rocky Road Brownies that are healthy?!  When I was searching for a dessert for Easter dinner I stumbled upon the Weight Watcher Rocky Road Brownies I couldn’t help but try them out.  The best part these brownies are super easy to make and only 4 points per slice.


For the Rocky Road Brownies you will need:

1 package regular brownie dry mix (I used a low-fat mix to make them even healthier)
¼ cup water
¼ cup unsweetened applesauce
4 large egg whites
¼ cup walnuts, coarsely chopped
¼ cup mini chocolate chips
8 medium marshmallows chopped or 1 cup mini marshmallows




Coat a 9X13 inch pan with cooking spray and set aside.


Prepare brownie mixture according to package direction but use ¼ cup water, applesauce and egg whites.


Bake according to package directions.  Remove from oven about 5 minutes before the end of the baking time and add chocolate chips and marshmallows over the top. 



Cook 5 more minutes and remove from oven.

Cut into 24 pieces each piece is 4 points.

Chocolate Chip Cheesecake


Who thought you could eat cheesecake while watching your weight?  Well you can!  When I was preparing for Valentine's Day, I wanted to find a dessert recipe that was healthy yet delicious.  Then I found the Weight Watcher Chocolate Chip Cheesecake Recipe.  This cheesecake is not as good a restaurant cheesecake, but it definitely is tasty.  

For the Chocolate Chip Cheesecake you will need:


10 items cream-filled chocolate sandwich cookies
8 Tbsp fat-free cream cheese
8 oz low fat cream cheese, tub-style
1 cup sugar
2 Tbsp all-purpose flour
1 cup fat-free cottage cheese
2 tsp almond extract, or less to taste
6 large egg whites
¾ cups mini chocolate chips

Preheat over to 325 F.

Lightly coat a 9-inch springform pan with cooking spray.  Crush cookies and sprinkle cookie crumbs evenly over bottom of pan.


Using an electric mixer beat together cream cheeses on lowest speed until well blended.


In a food processor, puree cottage cheese until smooth (it kind of looks like liquid).


Add cottage cheese and almond extract to cream cheese mixture, until smooth.


Add egg whites and beat until well blended.


Stir in ½ cup of chocolate chips.  Pour into springform pan.


Top with remaining chips.




Bake until cheesecake puffs and center is almost set, about 60 minutes.


Transfer to a wire rack and cool completely.  Run a knife around sides to loosen and release pan sides.  Cover and chill overnight.  Cut into 12 slices and serve.

The Chocolate Chip Cheesecake is 6 points for one slice.

I always save this cheesecake for later.  I wrap each slice in plastic wrap and place in a ziplock bag and then place it in the freezer.  When I want a chocolate snack, I will warm the cheesecake for 10 seconds.  The cheesecake still tastes creamy and delicious.

I have made this recipe three times since Valentine's Day and know I will be making it again very soon.

Chocolate-Fudge Cookie Bites


I love baking!!  It is one of my favorite things to do.  Baking calms me when I am stressed and what isn’t to love about sweets?  So I decided to try Weight Watchers’ Chocolate-Fudge Cookie Bites, which are only one point for each cookie!  

These cookies are small but really tasty!  You will need:

1 spray cooking spray
1/3 cups unsweetened cocoa
¼ cups margarine, softened
¾ cups sugar
4 oz unsweetened applesauce
1 tsp vanilla extract
1 ½ cups all-purpose flour
1 tsp baking powder
¼ tsp table salt
2 Tbsp powdered sugar

Preheat oven 375.  Coat two nonstick cookie sheets with cooking spray.

Place cocoa, margarine and sugar in a medium bowl; beat with an electric mixer. Add applesauce and vanilla; beat to blend. 
In another small bowl, stir together flour, baking powder and salt. Stir flour mixture into cocoa batter with a wooden spoon.
Shape batter into 48 marble-sized balls. Arrange balls 1 inch apart on cookie sheets.  I tried to shape the cookies with my hands but they kept sticking to my hands.  So I used a teaspoon to shape the cookies.
Bake until set, about 8 minutes. Remove from oven and allow cookies to stand for 1 minute. Remove to wire rack and cool; sprinkle with powdered sugar.
These cookies are small but give you the right amount of chocolate.  I froze the extra cookies in a freezer safe container.  When I want an extra bite of chocolate, I take out one or two of the cookies and heat it in the microwave for 10 seconds.  When heated the cookie tastes like chocolate fudge.  The cookies are not as sweet as some chocolate cookies but for diet cookies they definitely work!
